Description
This kimoto sake is called Tuxedo for a reason. It is very noble and elegant with a delicate aroma with pear and toffee in the nose. The kimoto brewing method gives it a fuller body and a soft and pleasantly oily texture. It’s a classy sake, which will work perfectly as an aperitif at your birthday celebration or a Christmas party. But Sohomare Kimoto Junmai Daiginjo is amazing with food because its deeper flavour which will go perfectly with umami-rich dishes like goat cheese, Iberico ham or tuna. Serve it in Burgundy glasses for better appreciation of its aroma and flavour.
Sohomare brewery is still operated by the founding Kono family, which set up sake brewing business in 1872 in Tochigi prefecture. The brewery is small but is very well known to sake connaisseurs not only in Japan but around the world. The brewery makes a kimoto style sake, the method used for sake brewing in Japan since medieval times.
