Description

Shirakabegura Kimoto Junmai is a smooth and light sake but still full of flavour and umami. Brewed using the traditional Kimoto method, it has dairy aroma with hints of melon and banana. We had Shirakabegura Kimoto Junmai with miso marinated salmon but it is dry enough to go well with sashimi, grilled white fish, mushrooms or asparagus. The sake uses the famous Miyamizu water I’ve written before. The brewery is a part of a large Takara Holding has been brewing sake since 1842.
