Description
A gentle fruity aroma with plum and green apple notes, which is not typical for a junmai sake, is achieved by a high polishing ratio and slow fermentation under a low temperature. While Nishijin Tokubetsu Junmai’s taste is not overly complex, it’s clean and dry with a mouthful feel, clean texture and a quick finish with a nice bitterness at the very end. The sake can be drunk at any temperature but for my taste, room temperature was the best.
Nishijin Tokubetsu Junmai is a very versatile sake and will go well with many different foods. We had it with cheese, cured meats and grilled fish and it was delicious.
The sake comes in a cardboard box with a head crown on the bottle made of local Nishijin textile, Kinran.
