Description
Asashibori means “brewed in the morning” and you can almost imagine a crispy winter morning and an old sake brewery in the snow with smoke coming from the chimney. Despite this picture, Keriyu Asashibori has summery aromas: strawberry, orange and sweet apple. You can feel the freshness of an unpasteurised sake straight away. It has a soothing oily texture and a complex sweet taste with a lot of umami and many nuances, and a long pleasant finish. You can feel that it’s genshu sake by a relaxing warmth which spreads over your chest as you drink it.
It’s very good chilled as recommended by the brewer, but it really shines when it’s warmed up becoming even smoother with more sweetness coming out.
Foodwise, it’s amazingly versatile. Chilled, it’s perfect for sashimi or cured meats. But when you warm it up, it will make a great company to a roasted chicken or grilled fish.
Founded in 1864 in Nagano, Endo Sake Brewery served the Suzaka clan, the feudal lords of the area.
